Ideal® Angel Food Cake / Cupcakes

1 ½ c Ideal® No Calorie Sweetener
1 c sifted cake flour
1 ½ c egg whites (10-12 large), room temperature
1 tsp cream of tartar
¼ tsp salt
2 tsp pure vanilla extract
½ tsp almond extract


  1. Preheat oven to 325° F.  In small bowl, whisk together ¾ cup of Ideal® and cake flour. Set aside.
  2. Beat egg whites until frothy; add cream of tartar and salt. Beat until fully incorporated then begin to add the remaining ¾ cup of Ideal® 1-2 tablespoons at a time. Once Ideal® is added, beat egg whites to soft peaks. (You will know when you have soft peaks because the egg whites will look like soft waves and when you lift the beaters, the peaks will droop back down into the batter. If your batter is in falling ribbon like patterns, it is not quite there. Slow mixer down if needed to assure you do not over beat. Do not beat until stiff peaks.)
  3. Add vanilla and almond extracts and beat only until evenly distributed.
  4. Sift flour and Ideal® mixture over the egg whites in 6-8 additions and gently fold it in after each addition. Take your time with this step as not to over fold and deflate the egg whites.
  5. Spoon batter into an ungreased tube pan with removable bottom or an Angel Food cake pan. Smooth top with a spatula and tap gently on the counter once or twice to ensure that there are no large air pockets.
  6. Bake for 40-50 minutes, until the top springs back when lightly pressed.
  7. Remove cake from oven and invert on a bottle. Allow to cool completely or overnight.
  8. Gently run thin knife around the sides, then around the bottom of the pan, to release the cake.

Flavored frosting tips: Add zests of lemons, limes, or oranges as well as fresh squeezed juices from each for a different flavored frosting. For pomegranate, use 100% pomegranate juice, touch of cranberry juice and lime zest. When adding juices, you may need to adjust amount of Ideal Confectionery. Colorings can also be added to enhance appearance.
