Ideal® Pasta Salad with Lemon Vinaigrette

Servings: 4

2 c cooked spiral pasta
1 carrot, chopped
1/2 c cherry or grape tomatoes, cut in quarters
1/2 c diced bell pepper
1/2 c chopped broccoli
1 TBS grated lemon peel
2 TBS fresh lemon juice
1/3 c olive oil
2 TBS white wine vinegar
1 1/2 tsp Ideal® No Calorie Sweetener
1 tsp dried parsley
1/8 tsp salt
1/4 tsp minced garlic
1 TBS chopped scallions


  1. Blanch carrots and broccoli quickly for color.
  2. Combine pasta and vegetables in large bowl.
  3. Whisk vinaigrette ingredients in small bowl until well blended.  Add to pasta.
  4. Serve room temperature or cold.

Use a mix of different or your favorite seasonal vegetables to give the salad a new twist.  Add basil instead of parsley for an Italian flavor.
